Making Sea Salt November 16, 2009

For an event last fall with OPENrestaurant entitled OPENcity, I made sea salt from water collected at Ocean Beach in San Francisco. From the 5 gallons of water I collected I ended up with approximately 4 cups of salt.

I was lucky and had a string of very warm and sunny days which provided optimal conditions to dry the salt. for the amount I dried, it took about 4 days. The salt dried completely in the sun, dried in to larger crystals which were light and flaky. As a comparison, I dried a small amount in a warm oven. This salt was not flaky, but instead dried into very fine grains.
